French Beans and Potatoes Subji, cooked Indian Style

Green beans, also known as French beans or haricot verts, are one of the most popular variety of beans, and are easily available worldwide. These annual beans are from the Fabaceae family like other variety of beans like Surti papdi, long beans, cluster beans etc. French beans are rich in dietary fibers, vitamin A, C and K, and many minerals and are also considered as a medicinal plant. There is a variety of dishes made with French beans. Here I am presenting a very delicious and healthy dry vegetable preparation from North India. We have cooked French beans with potato. Ingredients (serves 4)

  • French beans about ½ pound/250 gms
  • Potatoes 2 medium
  • Oil 2 tbsp 
  • Cumin seeds 1 tsp
  • Asafoetida 2 pinches
  • Turmeric powder ½ tsp
  • Red chili powder ½ tsp
  • Coriander powder 1½ tsp
  • Salt 1 tsp or to taste
  • Dry mango powder (Amchoor powder) ½ tsp
  • A little bit of garam masala

Method of preparation:

  1. The following picture shows French beans/green beans.

  1. Remove the pointed sides and strings of the French beans. Wash the beans thoroughly and pat dry on the kitchen towel.
  2. Now cut the beans into about half an inch pieces.

  1. Peel, wash, and cut the poatoes into half inch pieces .
  2. In a wok, heat oil on medium heat. Add cumin seeds . When seeds change the color add asafoetida.
  3. Now add turmeric powder, cut french beans and potatoes. Mix well and fry for a couple of minutes. Add salt, red chili powder, and coriander powder. Mix well. Fry for another minute.
  4. Cover the lid and cook the vegetables on low heat until all the veggies are cooked. It takes about 10-12 minutes to cook the beans and potatoes.

  1. Add dry mango powder (amchoor powder) and a little bit of garam masala. Fry the vegetables for a couple of minutes.
  2. Delicious and nutritious French beans and potato is ready to serve. Serve with Roti or Plain Paratha. Beans potato preparation goes very well with rice and dal also.

Some Tips/ Suggestions:

  1. Choose thin and tender French beans. These are ideal for cooking as they taste better and get cooked sooner.
  2. Green vegetables taste better and look better when green color is maintained after the cooking so make sure not to overcook the beans.
  3. You can also add green peas in this vegetable preparation.
