(Sesame squares)

Sesame seeds are extremely nutritious. Sesame seeds come in white, black or light brown varieties and are rich in calcium, phosphorus, magnesium, potassium, and a variety of vitamins. Unhulled (with outer skin) seeds are more nutritious than the hulled seeds since they have about two times the amount of calcium than that in the hulled seeds.

Sesame is especially used in winter festivals like Makar Sankranti. Today we are making delicious sesame and jaggery squares or sesame barfi. I have also used pistachio to garnish the barfi so it looks beautiful and attracts kids also. Try this sesame barfi and please do not forget to share your valuable comments. Happy cooking, Shuchi

Ingredients (makes about 12 barfis/squares)

  • White sesame seeds (til) 1 cup
  • Jaggery 1 cup
  • Water ¼ cup
  • Ghee 2 tsp
  • Pistachio, finely cut 2 tbsp

Method of preparation

  1. Grease a tray and keep aside. I like to put percemant paper on tray so trey does not get cut marks.
  2. Dry roast the sesame seeds untill aromatic and light brown (takes about 5 minutes). Be careful when you roast the sesame as it splutters. Set aside to cool down.
  3. In the grinder coarsely grind the sesame seeds.
Unhulled Sesame (saphed til)
  1. In a pan take water and jagerry. Boil and let the jaggery completely melt in the water. Add ghee, mix well and cook for about a few minutes. The syrup will thicken. We need 2 string jaggery syrup for this recipe. Two string syrup means that you take a drop of syrup between your two fingers and then stretch the fingers - then if the syrup that sticks between the two fingers is making two threads (or strings) then the thickness of syrup is appropriate. turn off the heat.
  2. Now add ground sesame. Mix well.

  1. Spread the mixture in the greased tray. Grease your hand and flatten the mixture. You can also roll it with rolling pin.
  2. Spread the chopped pistachio evenly and press it.
  3. Let it cool. When cooled, cut the barfi in squares.

  1. Store the barfi in a airtight container.

Tips / Some Suggestions:

  1. Jaggery is easily available in Indian stores, it can also be found in health store/ organic stores. In case if you do not find jaggery, use brown sugar.
  2. you can also add some other chopped nuts in this preparation.
