Cauliflower Almond Soup

Ingredients (serves 4)

  • Cauliflower florets 2 cups
  • Almonds 1/3 cups
  • Milk 1 cup
  • Butter 1 tbsp
  • Bay leaves 2 small
  • Salt 1 tsp or to taste
  • Crushed black pepper as per taste`

Method of preparation:

  1. Heat 1 tsp butter. Add cauliflower florets. Sauté for a minute. Add almonds. Mix well. Add 2 cups of water and 1 tsp salt. Mix well. Cover the lid and let cauliflower and almonds get cooked.
  2.  Turn off the heat when cauliflower florets get tender. Let the mixture cool.
  3. In a blender take cauliflower almond mixture and and blend it to get smooth texture.
  4. Heat saucepan. Add 2 tsp butter. Add bay leaves. Fry for a few seconds. Add pureed cauliflower almond mixture. Add about one cup of milk. You can aslo add water insted of milk to get required consistency. Add crushed black pepper. Taste and adjust the flavoring. Add more salt if needed. Cook for about 5 minutes on medium heat.  
  5. Delicious and healthy cauliflower and almond soup is ready to serve.

Some suggestions/ Tips

  1. I have used whole almonds with skin. you can remove the skin of the almonds if you wish to.
  2. Bay leaves give a nice aroma to soup. You can also add a hint of garam masala to the soup.
  3. Milk is optional in this recipe. You can use water in place of milk.
