Shahi Pulav is a rich rice delicacy goes well with paneer curries, dal makhani, kaju curry etc. Shahi is a Hindi word for Royal. So this is a royal rice preparation. Royal dishes have some special ingredients which are expensive, like, dried fruits, nuts, paneer (cottage cheese), Saffron, etc. Shahi dishes are usually cooked in Ghee (clarified butter) or butter. This special rice dish we have used a lots of cashews, raisins and wholesome spices. Basmati long grain rice would be ideal for Shahi pulav preparation. Ingredients (serves 4)

  • Basmati rice 1 cups
  • Cumin seeds ½ tsp
  • Bay leaves 2
  • Green cardamoms 5
  • Black cardamoms 4
  • Black pepper 8-10
  • Cloves 5-6
  • Cashew nuts 1/3 cup
  • Raisins 2 tbsp
  • Ghee 2 tbsp
  • Water about 2 cups

Method of preparation

  1. Clean, wash, and soak basmati rice in two cups of water for 20 minutes.
  2. Wash the raisins and keep aside.
  3. Now drain the water and keep the soaked rice aside. Do not discard the water as we will be using it to cook the rice.
  4. In a pan heat ghee ( clarified butter)on medium heat. Add cumin seeds, bay leaves, green and black cardamoms, cloves, and black pepper. Fry the whole spices till fragrant. Fry for 30 seconds.
  5. Now add cashew nuts and fry for a few seconds.
  6. Add soaked rice, and raisins. Mix well and fry the rice for a couple of minutes. Add water (usually the ratio of rice and water is 1:2 for basmati rice). After the first boil reduce the heat and cook until rice are done. It takes about 12-15 minutes to cook the rice. Turn off the heat.
  7. Rayal pulav is ready to serve. Serve Shahi Pulav with Dal Makhani or Paneer butter masalaor with your favorite curry.

Some tips and Suggestions

  1. You can also add some fried paneer (Indian cottage cheese) pieces to this royal rice preparation to give an additional taste.
  2. You can also add some saffron. To add saffron, soak saffron threads in 1 tbsp milk. Add this milk to rice when rice are half cooked. Add saffron milk in the rice here and there. After adding the saffron milk do not mix the rice so rice gets nice color combination of white and yellow. Cook until rice are done. So the rice will have shades of white and yellow .
