Rice is a staple food in Indian cuisine, along with lentils and wheat. Rice is extensively used all over the world in different forms. Italy, France, Thailand, China Mexico etc. all use rice extensively in their cuisines. There are variety of rice used in Indian cuisine from long grain, Basmati rice (Amazon Link for Basmati Rice) to aromatic kala namak rice. In South India Sona Masuri rice is more popular. Rice can be of different color also like white, brown or red rice. There are some wild variety of rice like samo rice which is even used for fasting in India.

Rice is high in carbohydrate. Some variety of rice have iron as well. Usually diabetics should cut the intake of rice in their diet.

In Indian cuisine rice delicacies vary from region to region. Plain white rice can be served as a side dish with lentils and/or curry preparations or it can be served as a complete meal in form of tehri, yogurt rice, tamarind rice, lemon rice, Biryanis, Pulavs, etc. In South India, ground rice is used in Dosa, idli, uttapam, appam etc. preparations, while in Western India rice is used for steam cooked dishes like Dhokla etc. The flattened rice (poha/chivda) is sused for snacks and puffed rice (laiya/murmura) is sued to make many chaat items. In India rice is also used in desserts, like Kheer (rice pudding), phirni, etc. In South India, rice is used to make sweet pongal, and in Maharashtra rice flour is used to make Modak, a sweet dish made for Ganesh Chaturthi festival.
